  2. I love making poached eggs with english muffins and fruit for brunch. The hollandaise sauce is hard to make but I love the combo of protein, grains, and fresh fruit on a weekend!

  3. My fave brunch recipe is healthy banana pancakes. They’re super low calorie, but so tasty! Serves 1: 1/4 cup whole wheat flour, 1/2 T. baking powder, 1/2 T. vanilla extract, 1/2 T. Stevia, 1/4 cup almond milk, 1/8 cup water, 1/2 banana, mashed.
    1. Combine dry ingredients in a small bowl.
    2. Mash banana in a separate bowl. Add vanilla and milk.
    3. Add dry ingredients to wet ingredients and mix until combined. Pour in water until mixture is more pancake-like.
    4. Pour by 1/4 cups onto a warm skillet sprayed with cooking spray. Cook for about a minute on both sides, or until golden brown.
    5. Serve warm with banana slices and peanut butter for protein.
    I calculated the calories, and the entire thing is only 188 calories! Wow, who could ask for a healthier, tastier breakfast!

    This recipe is literally one of the easiest, healthiest, and most delicious things you can make to impress ANYONE at brunch. It’s even super-portable for city dwellers if you bake it in a casserole dish with a lid! Also SO easy to make lactose-free/vegan/gluten-free!

    I use gluten-free rolled oats, vanilla soy milk, and little to NO sugar, depending instead on the apple sauce, vanilla, and cinnamon! I think next time I’ll incorporate mango, either some kind of jam/sauce or slice/chunks on top, and pair it with MoscaMango!

  5. Take a box of real fruit strawberry popsicles and put 1 in each champagne glass. Pour Mosca Mango over the top of the popsicle, filling the glass. While you enjoy your cocktail outside, the strawberry popsicles melt into the drink! Try it two ways: Think alcoholic smoothie or Mosca Mango soaked Popsicles! =)

  6. Take a mango, remove most of the fruit to leave the pit with a thin layer of flesh, place this is a large 16 oz. clear glass with a handle, fill glass with ginger ale, cranberry juice, and 1 oz. of chai, adorn top with 2 tps. of Greek yogurt, a dash of cinnamon and a sprig of mint. Enjoy!

  7. Gooey Monkey Bread

    ingredients
    1 cup sugar
    2 teaspoons ground cinnamon
    1/2 cup butter, melted
    2 12 ounce cansrefrigerated buttermilk biscuits (20 biscuits total)
    1/3 cup caramel ice cream topping
    2 tablespoons maple syrup

    directions
    1. Preheat oven to 350 degrees F. Generously grease a 10-inch fluted tube pan or 10-inch tube pan; set aside.
    2. In a medium bowl combine sugar and cinnamon; set aside. Place melted butter in another medium bowl. With kitchen shears, cut each biscuit into fourths. Toss biscuit pieces, several at a time, in the melted butter and then in the cinnamon-sugar mixture to coat. Layer biscuit pieces in the prepared pan. Lightly press biscuit pieces into pan. Sprinkle with any remaining cinnamon-sugar mixture and drizzle with any remaining butter.
    3. In a small bowl stir together ice cream topping and maple syrup. Drizzle over biscuits.
    4. Bake about 30 minutes or until golden brown and a toothpick inserted near the center of the biscuit pieces comes out clean. Let stand in pan for 10 minutes. Invert onto a large serving platter. Serve warm.
